Food is not only something we eat because we need to survive but we use it as a means to socialize and connect. During a party, a dinner or a gathering, food is usually a main component. It keep us coming back for more at the table and encourages us to socialize. Food can also be great conversation starters!

Growing up, I did not have much interest in the kitchen as far as cooking or baking. If you asked me to cook a whole meal for myself, I would have grabbed a frozen dinner from the freezer and popped it into the microwave. Easy, quick and it got me fed! I rarely had to do this, however, since my mother did the cooking and constantly made home-cooked meals for our family. I did help prepare meals, like chopping vegetables or mixing ingredients together for her. Other than that, I remember my dad telling me he would rather have me doing my homework than trying to burn down the kitchen!

Cooking and baking just was not in my area of interests when I was growing up. Now, that I am grown, however, it has become an activity that I cherish. It is something that helps connect my family and provides an interest that my husband and I can share. My kids enjoy lending a hand, especially when it comes to desserts. My husband likes to tell me about new recipes he discovers and then we will try them together.

This recipe is one that he found and we have become addicted to it! It definitely brings us together when we are in the mood for a sweet but light dessert.

Yields: Amount depends on size (Bundt cake: 12-16 slices)

Ingredients to Make Pineapple Angel Food Cake

  • 1 can, (20 ounces) crushed pineapple in its own juice
  • 1 box Angel Food Cake mix
  • Cool whip, optional
  • Whip cream, optional
  • Other fruit as topping, optional

Instructions to Make Pineapple Angel Food Cake

  1. Move rack to lowest position in oven. Preheat oven to 350 degrees Fahrenheit.
  2. In a large mixing bowl, combine entire can of crushed pineapple and Angel Food Cake mix. Do NOT follow instructions on box - do NOT add water! Stir until just combined for about one minute. The consistency will be frothy.
  3. Cook for 25-35 minutes if you are using a large pan. Since I used a variety of baking ware, the time varied on each of them. I found that the cupcakes took about 15 minutes to bake, the shot glasses were 10-13 minutes and the small cake pan was 15 minutes. When toothpick comes out clean and when cake looks dry and cracked, it is done. The color of the cake should be white with a slight golden brown on top and sides.
