Coffee Cake with White Chocolate Mocha Icing
Baking with Coffee
My husband is a big fan of coffee and I enjoy creating new recipes to bake so I decided to try baking a cake for him that included coffee. I'm happy I did because he loved it! Bonus: the coffee also gave the house a nice aromatic smell. It's a simple recipe since I used boxed cake mix for this one but I have tried making it from scratch. This recipe is easier so I thought it would work well for those who want to give it a try to you can change up the recipe to suit your preference.
I plan to bake this cake with different flavors of coffee and icing in the future. Now, he can drink his coffee and eat it, too!
Coffee Cake
Cook Time
Ingredients
- 1 box Duncan Hines French Vanilla Cake Mix, or other vanilla or white cake mix
- 1/4 cup unbrewed coffee of your choice, I used Folgers Gourmet Selections Lively Columbian
- 1/2 cup shortening
- 1/2 stick unsweetened butter, softened
- 2 tablespoons White Chocolate Mocha Creamer, I used International Delight brand
- 1-2 tablespoons milk, optional
Baking Cups
Instructions for Cake
- Set oven to bake at 350 degrees. If making cupcakes, insert baking cups in pan. For cake, grease cake pans.
- In a large bowl, follow directions on box for cake mix. Stir in coffee grinds.
- Pour batter into cake pan or baking cups.
- Bake for 15-20 minutes or until toothpick comes out clean when inserted in center of cake.

Instructions for Icing
1. In a large bowl, mix shortening, butter and creamer with an electric mixer until creamy.
2. Add in milk if too thick.

Kaldi tried the berries himself and had a similar reaction.
