Baking with Coffee

My husband is a big fan of coffee and I enjoy creating new recipes to bake so I decided to try baking a cake for him that included coffee. I'm happy I did because he loved it! Bonus: the coffee also gave the house a nice aromatic smell. It's a simple recipe since I used boxed cake mix for this one but I have tried making it from scratch. This recipe is easier so I thought it would work well for those who want to give it a try to you can change up the recipe to suit your preference.

I plan to bake this cake with different flavors of coffee and icing in the future. Now, he can drink his coffee and eat it, too!

Coffee Facts and History

  • A popular Ethiopian legend says that coffee was discovered by a goat herder named Kaldi, who found his goats full of energy after eating the red berries of the coffee shrubs. Kaldi tried the berries himself and had a similar reaction. A monk witnessed their strange behavior and took some berries back to his fellow monks and they, too, were alert and energized (The Caffeinated HIstory of Coffee by Tori Avery, PBS.Food, April 2013).
  • According to the National Coffee Association USA, in the article, The HIstory of Coffee, the Arabs were the first to cultivate coffee and begin its trade.
  • In 1822, the First espresso machine was made in France and Dr. Ernest in 1933 invented the first automatic espresso machine. The modern-day espresso machine was created by Italian Achilles Gaggia in 1946 (The History of How We Make Coffee, by Mary Bellis, About.com Guide).
  • Coffee is one of the most valuable primary products in world trade, second in value only to oil as a source of foreign exchange to producing countries (The Story of Coffee, International Coffee Organization).
